LIHUE — Papalua Island — flavors of paradise will have its Fudge and Coconut Mele Mac Cake featured Monday on the “Cooking Hawaiian Style” program on OC16, starting at 7:30 p.m.
“This was a very interesting learning experience,” Chris Spinosa said of the taping of the segment featuring host Lanai Tabura, a television and radio personality.
“Cooking Hawaiian Style” premiered on OC16 in October and features recipes from some of the state’s top chefs. The show tapped Spinosa and Morris Wise, owners of Papalua Island, to appear on the program.
“The recipe for the Fudge and Coconut Mele Mac Cake will be available on the ‘Cooking Hawaiian Style’ website (www.cookinghawaiianstyle.com) after the show airs,” Wise said.
The program will also be re-broadcast on Feb. 24.
Wise and Spinosa are more familiar to residents and shoppers of both The Kauai Culinary Market on Wednesdays at The Shops at Kukuiula, and on Saturdays at the Kauai Community Market at the Kauai Community College.
Both men anchor the tables featuring Hula Baby Biscotti and Ko Bakery Crisps as well as assorted cookies, scones and other baked goods.
“We were honored when the staff of ‘Cooking Hawaiian Style’ asked us to appear on this program,” Wise said.
Wise said it was interesting to see how everything fell together in 24 minutes.
“We brought over pre-baked cake rounds in our luggage when we went over to tape the show,” Wise said. “Everything actually fell into place nicely within the time-based segments.”
Mayor Bernard Carvalho Jr. added his congratulations to the pair of master bakers on their appearance on the cooking show.
“It’s great to see one of our Kauai Made members receive statewide recognition for creating high quality, unique, and genuine Kauai products,” Carvalho said in a release.
Wise explained Papalua means coming together as one, and Papalua Island brings the two master bakers, along with David Schwartz and Byron Barth together, sharing a commercial kitchen with Aletha Thomas of Monkeypod Jam in Lihue town.
Hula Baby Bakery, Ko Bakery merged in 2013 to create Papalua Island — flavors of paradise, LLC, bringing together Wise, Spinosa, Schwartz and Barth.
Papalua Island products are available at community markets, Wednesdays at The Kauai Culinary Market in Poipu, and Saturdays at The Kauai Community Market at Kauai CC.
