PUHI — Ko Bakery and Coffee Shop is growing.
Housed in its new bakery/retail center in the Puhi Industrial Park at 1611 Haleukana Street, Morris Wise said they are contemplating opening on Saturdays because of customer requests.
“I didn’t realize there were that many people who work in this area,” Wise said. “We’re open from 6 a.m. and offer breakfast specials. A lot of customers have found us in this location that we opened in November and celebrated a grand opening in December.”
The bakery that offers coffee, assorted sweet baked goods, whole cakes, and biscotti is across the street from Mark’s Place and Contemporary Flavors Catering, and is on a growth path.
“We are working toward full service coffee,” Wise said. “We have coffee now, but our expresso machines are coming.”
The limited coffee service did not stop customers who came through the door for pick-me-ups, leaving with coffee and something to wash down.
“We’re able to offer more things to customers in this space that is open to the kitchen,” Wise said. “Customers can look in the back and see how we’re working. We can do a lot more in this space than we could do in our other locations. And, our kitchen is also wired for growth — we can add a walk-in (refrigerator) when we’re ready, and there is room for more storage when we need to expand.”
With the new bakery in Puhi, Ko Bakery has stopped doing the farmers market and street fairs where a lot of fans “discovered” them.
“Customers and fans can come in here for their treats,” Wise said. “We’re still trying things out, and there is a lot of room for growth, but we can do a lot more here for our fans.”
Chris Spinosa, the bake wizard of Ko Bakery, said there are no shortcuts to the quality of Ko Bakery products, a full lineup available on their kobakery.com website. Online ordering is also available.
Ko Bakery offers a full lineup of cakes and cheesecakes for everyday celebrations, or for special occasions, including weddings. It adds to this offering with Hula Baby Gourmet items that includes its biscotti and granola, and rounds out the selections with Ko Treats that spans a variety of crisps, and baked goods, including its scones, cookies, brownies, and mini cakes.
“We use real butter, eggs, and milk,” Spinosa said. “The prices might be a little higher because of this, but you get quality.”
Ko Bakery is open from 6 a.m. to 2 p.m., Mondays through Fridays, and is closed on Saturday and Sunday.
