Patrons attending the Valentines Chocolate Workshop will leave with a box of chocolates they created during the two-hour workshop Tuesday, Feb. 12, from 5 to 7 p.m.
“This is based on a previous demonstration I did,” said chef Judy Capertina of Haole Girl Island Sweets. “This will be a demonstration on chocolate, but with a lot more hands-on by the workshop participants. We’ll be working on various items in chocolate, including a box of chocolates the participants will have when the class is done.”
Capertina, the former executive pastry chef at the St. Regis Princeville resort, will be discussing the properties of chocolate couvertures, coating and raw chocolate, different tempering methods, garnitures, molds, filled chocolates, truffles, transfer sheets and more.
The two-hour class will be held at the Haole Girl Island Sweets kitchen at 934B Kipuni Way in the Arzadon Industrial Park in Kapaa.
There is a fee that helps cover cost of materials in the workshop.
“We’ll have some pupu out for people to enjoy, too,” Capertina said. “This is all included in the workshop fee. If people want wine to enjoy with the pupu, this is a BYOB event.”
