Like so many on the island with exploding avocado trees, Greg Espirito wondered what to do with the bounty.
Working as a chef for the newly opened BurritoHead in Kapa‘a, Espirito created an avocado salsa to be used on BurritoHead’s tacos, quesadillas, flautas, nachos and burritos.
Born and raised on Kaua‘i, Espirito said he “loves coming to work every day. The atmosphere and opportunity to open and develop a new restaurant” are a few things that makes Espirito a devoted BurritoHead.
Having worked in the Love Boat kitchen for Hawaiian American cruises and local restaurants Wasabi’s and Dairy Queen, BurritoHead is Espirito’s favorite food industry job thus far.
“I get to create new salsas all the time — I’m in the process of making a new papaya-pineapple salsa for our fish and chips,” said the chef.
Espirito “started bringing in the avos and mixing with the other ingredients that we source through Kauai Grower’s Exchange and local farmers,” explained co-owner Brendan Lynch.
“He gets really excited to see that the fruits that might go bad at his home can turn smiles on folks that pass through BurritoHead.”
Lynch demonstrates the company’s respectful attitude toward their employees: “Greg is a big-wave surfer and has asked us, in advance, for time off in the winter (when the waves are over 25 feet) but every day in between he is the greatest kitchen manager on the island of Kaua‘i. We are lucky to have him at BurritoHead.”
BurritoHead is located in Kapa‘a shopping center, and is open later than all other restaurants in the area.

Greg’s Avocado Salsa at BurritoHead
2 ripe avocados (chopped and forked through)
2 limes squeezed
1 jalepeño pepper (diced)
1 serrano pepper (diced)
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 diced tomato
1 wedge of diced papaya or mango
Slice, dice and mix in a bowl. Apply to BurritoHead tacos, quesadillas, flautas, nachos or burritos and ‘Let the good times roll!’
