The Blossoming Lotus, a popular vegan eatery in Kapa‘a, announced last week its plans to close its doors Dec. 31.
In an open letter to a community newsletter, owner Gabe Zingaro wrote the restaurant would close, “barring a miracle,” despite recent success, because of past debt it is carrying.
“The Blossoming Lotus has been a pillar in our community and a beacon of light for sustainability and healthy food alternatives,” Zingaro wrote in the letter.
“I hope we can all find a sense of peace knowing we did have such a positive impact on our Kaua‘i community,” he wrote.
