KAPA‘A — With sweets that could make almost anyone’s mouth water, Icing on the Cake began baking its tempting cookies and cakes for locals and visitors alike four years ago in Kapa‘a.
Patrick and Andrea Quinn, a husband and wife team living in Kilauea, opened their business after finding a commercial kitchen in the Waipouli Plaza Building and have reportedly been increasing their clientele ever since.
Taking what was once a former Chinese restaurant, left abandoned six years before they found it, the Quinns spent weeks cleaning and reorganizing the space so that the smell of freshly baked goods could soon begin wafting through the air.
A former pastry chef at Roy’s, Andrea strives to use as many high quality local and organic ingredients as possible for their recipes.
“We’re very committed to using sustainable practices and as much local product as we can,” she said in an interview Monday.
She also said, however, that it has become increasingly difficult to find locally produced ingredients, including eggs.
“I can’t get local eggs anymore, nobody is doing eggs, but I would love to use them,” she said.
Icing on the Cake first began as strictly wholesale, with several accounts at different restaurants and cafes, but most recently started specializing in cakes for weddings and birthdays as well.
One of their wholesale accounts includes Costco, where their products are seen lining the shelves.
Their treats can also be found at many locally owned businesses including the Kilauea Fish Market and Hanalei Dolphin on the North Shore and Small Town Coffee in Kapa‘a.
In addition, both Patrick and Andrea find themselves busy working with caterers for events, such as New Year’s Eve gatherings, where they recently baked homemade crackers and foccia.
Andrea said they usually have items available for the holidays including pumpkin and apple pies, Bûche de Noëls and rolls for Christmas or Thanksgiving.
Not only does Icing on the Cake maintain its role as a locally owned business, they also try to be as environmentally conscious as possible and are working on repackaging their macaroons with biodegradable material so they no longer have to be wrapped in plastic.
When asked if there were other businesses dishing out similar sustainable treats across the island, she had nothing but “sweet” things to say.
“Everyone in this business does such a good job and we all have our little niche, which is a good thing because we can all coexist peacefully,” she said.
Icing on the Cake is open to taking special requests and offers delivery services to all parts of the island.
