LIHU‘E — Kaua‘i Beach Resort will be having a Mother’s Day brunch on May 9, from 9 a.m. to 1 p.m. in the Naupaka Terrace, a plantation-style restaurant offering comfortable seating with views of the ponds, waterfalls and ocean, a news release says.
The special buffet is priced at $39 for adults and $21 for children ages 5 to 12. Children 4 years and under are free. Prices do not include tax or gratuity. An 18 percent service charge will be added to the check for parties of six or more adults.

Chef’s Bread Pudding
4 egg whites
1 large egg
1 1/4 cup 2 percent milk
3/4 cup evaporated milk
1/2 cup firmly packed brown sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/8 teaspoon salt
1/8 teaspoon ground allspice
2 teaspoon vanilla extract
1 (12oz) french bread loaf
Cut into 1-inch cubes (about 8 cups)
4 tsp. brown sugar
1/2 tablespoon butter, cut into small pieces
1/4 cup sliced almonds, toasted
Whisk together egg whites and egg in a medium bowl until blended. Whisk in 2 percent milk and next 7 ingredients.
Arrange bread cubes in an 8-inch square pan coated with cooking spray. Pour egg mixture evenly over bread. Sprinkle evenly with 4 teaspoon brown sugar, butter, and almonds. Press down gently on bread cubes, and let stand 10 minutes.
Bake at 350 dgrees for 30 to 35 minutes or until a knife inserted in the center comes out clean. Serve warm with vanilla ice cream.
