PUHI — “Sweet with a bang” is how a taster described the Spicy Tomato/Cranberry Sauce developed by Lenore Klass for the Kaua‘i Community Market, Saturday.
Coordinated by the Kaua‘i County Farm Bureau, Klass, a member of the Kaua‘i Association of Family and Community Education program and a finalist in the 2010 Pillsbury Bake Off, said she created the recipe to help promote the tomato, the featured vegetable of this year’s Kaua‘i County Farm Bureau Fair, Aug. 25-28.
In addition to the Spicy Tomato/Cranberry Sauce, Klass had samples of purple sweet potato. The sweet potato is one of the special ingredients in the contest for the home show at the fair.
“We’ll be back on Aug. 20 and have some yams, the other special ingredient, prepared,” Klass said.
Entries in the special ingredient contest must use yams and/or sweet potatoes in a recipe and can be in breads, muffins, cookies or cakes.
Judging will be by the Danish system and prizes will be awarded accordingly.
The recipe must accompany the entries and all recipes become the property of the Kaua‘i Association for Family and Community Education.
The KAFCE is also hosting other contests for this year’s Kaua‘i County Farm Bureau Fair, including the special baking contest for youth and adults featuring Open Judging.
Entries for Open Juding, a Kaua‘i Grown Fruit Pie, must be brought to the fair on Aug. 27 by 12:30 p.m. for the 1 p.m. judging.
The exhibitor must be present for the judging and the recipe must accompany the entry.
Klass selected the tomato for her sauce because the Roma tomato is the special vegetable which growers can enter into the Produce Show.
She said using tomatoes in preparing food is similar to using plums because it has the same pectin levels and by using other flavors to balance the tomato, the results are similar.
Bob Klass, Lenore’s “official taster,” approved of the tomato/cranberry sauce, helping himself to a fifth helping with crackers after taking care of errands.
Melissa McFerrin, the Kaua‘i Farm Bureau coordinator for the Kaua‘i Community Market as well as the farm fair, said people are invited to visit www.kauaifarmfair.org where they can register for the KAFCE contests, booth space, and special events including the keiki talent contest and the Meadow Gold Healthy Baby Contest.

Spicy Tomato/
Cranberry Sauce
1 medium onion, chopped
2 cups Roma tomatoes, approximately 1.25 pounds, chopped
1-1/2 cups fresh or frozen cranberries
1/2 cup dried cranberries
1 cup brown sugar
1/2 cup cider vinegar
3 tablespoons tomato paste
1/2 to 3/4 teaspoon dried hot pepper flakes
1/2 teaspoon salt
1/2 tablespoon soy sauce for umami
Bring all ingredients to boil in 2-quart heavy non-reactive saucepan over moderate heat, stirring often. Reduce heat and simmer, uncovered, stirring occasionally until thick, 25-30 minutes. Cool, then chill, covered, at least eight hours for the flavor to develop.
