PUHI — Hula Baby Biscotti has only been at the Kaua‘i Community Market for three months, but is enjoying brisk sales with its line of nine biscotti flavors and packaged mixes.
Morris Wise, who owns the Island Biscotti Co. and Bake Shop — home of the Hula Baby line of biscotti — with Byron Barth, said he is excited about the new Hula Baby Granola that will join the lineup.
Biscotti is derived from “biscotto,” a crisp cookie or biscuit of Italian origin which is flavored, usually with anise and filberts or almonds, according to the Merriam-Webster dictionary.
The term is usually used in plural and is from a word meaning literally, bread baked twice.
“This is our only retail outlet,” Wise said. “We have product in stores from Hanalei to Hanapepe. Primarily, we are a wholesaler with our kitchen located in Kapahi. But the Kaua‘i Community Market is our opportunity to come out and meet the public.”
With a lineup of nine flavors, including Nuts for Rosemary, Cococanana, Lemon Macadamia, Pineapple Lime Lavendar, Island Macadamia, Coconut Cinnamon Almond, and Butter Mint, Wise said the two leading flavors are the White Ginger and the Chococomacs, the latter featuring chocolate, coconut and macadamia nuts.
“We also have two flavors of mixes so people are able to make their own biscotti in their own kitchens,” Wise said. “There is the basic macadamia nut and the chocolate macadamia nut, but with these two flavors, people can make any flavor they want by adding different products.”
Since opening the business on Kaua‘i in April of 2011, Wise said Hula Baby Biscotti is found in a lot of different shops, but the main outlets include Robin Savage Gift and Gourmet in Hanalei, the Princeville Wine Market, Banana Joe’s in Kilauea, Kojima Store in Kapa‘a, the Wine Garden in Puhi, the Wine Shop in Koloa, Living Foods at The Shops at Kukui‘ula, and Aloha Spice in Hanapepe.
Currently, Wise said they are working on getting a website launched for the Hula Baby line, but for now, people can follow Hula Baby’s developments on Facebook.
“We’re excited about launching a website, and of course, the new Hula Baby Granola which is coming soon,” Wise said.
