There was a reason the cake was so good when Jennifer Ingersol baked some for the Native Hawaiian Chamber of Commerce series of the Office of Hawaiian Affairs candidates.
Jennifer is a two-time author of cookbooks, and during the Kaua‘i Coffee Christmas Open House, modified one of her sweet potato pie recipes to the Kaua‘i Espresso Roast Coffee Crust Sweet Potato Pie with Koloa Rum Fudge Drizzle. She said to visit www.potionforlove.com for copies of the cookbooks.
Dirk Soma, a former culinary instructor, took the place of Steve Nakata (he is at state competition) in leading the Kaua‘i Community College culinary arts students in the demonstrations and even joining Wayne Katayama in judging the Kaua‘i Coffee inspired culinary items.
Kudos to Eileen Winters (she had a new malamute for this year’s parade) and all of her Rotary Club of Kaua‘i crew (Ron Morin did a great job with the Rotary float, too!) on a great Lights on Rice parade (anybody got an idea of how many people there were on the sidewalks?)
