PUHI — Oven lag made Judy Capertina miss “the 100-person rush” at the Kauai Community Market on Saturday.
But Capertina and crew still arrived in time to capture a hungry lunch crowd with a variety of croissant offerings on day one of her business, “Haole Girl Island Sweets.”
“Today is our first day and we wanted to get a feel for how things are,” Capertina said.
Melissa McFerrin, Kauai Farm Bureau coordinator for the weekly farmers market, said Capertina has a certified kitchen in the Puhi Industrial Park
“That means her goods are fresh. She baked a lot of the goods, just this morning.” McFerrin said.
Capertina left “the corporate world” as the executive pastry chef at the St. Regis Princeville Resort and went out on her own.
She uses locally-produced material such as Kilauea goat cheese and Maui Gold pineapple.
One customer already noted how the illustration on the title banner bears the red hair of its owner.
“We’re starting small,” Capertina said. “Initially, we’ll be at the Kauai Community Market on Saturdays, and we’ll see how it grows from here.
She joins the food row where choices from snacks to full lunches are available during the market hours of 9:30 a.m. to 1 p.m.

The Kauai Community Market, coordinated by the Kauai Farm Bureau, is a partnership with the Kauai Community College. The Kauai Farm Bureau also coordinates the Kauai Culinary Market on Wednesdays at The Shops at Kukuiula from 4 to 6 p.m.
