PUHI — “I have my chicken wrap with cheese,” said Vanessa Hernandez, a first-year student at the Kauai Community College. “I didn’t know you could have it with cheese.”
The Kauai Community College cafeteria is open for breakfast and lunch Mondays through Fridays from 8 a.m. until 1 p.m. with an assortment of bento, sandwiches, homemade pies, and beverages.
Foods are prepared by the culinary arts students under supervision from the culinary arts program staff.
“Are you ready for this?” Chef Martina Hilldorfer asked Introduction to Cooking student Kaleomana Meatoga of a flambe technique she demonstrated. “Can you handle this?”
“I can, chef,” Meatoga replied, working his magic on a saute pan with assorted peppers.
The technique will be utilized during the Poipu Food and Wine Festival by the Kauai Community College culinary arts students because one of the stations set up will be an action station featuring Bananas Foster, said Stacie Chiba Miguel of The Shops at Kukuiula.
The Poipu Food and Wine Festival runs Nov. 8 through 12 with the Kauai Community College culinary arts program being the benefactors.
Menu offering at the college cafeteria is enhanced with the addition of at least four daily hot lunch specials, the day’s offerings found on the Kauai Community College website, and on Mondays and Fridays, the Short Order Lunch Menu which includes hamburgers, cheeseburgers, Teriyaki Burgers, Bacon Cheeseburgers, Mushroom Swiss Burger, Garden Burger — all served with lettuce, tomato, and onions.
“May I fire up the grill, chef?” Clyde Racelo, an Introduction to Cooking student asked Chef Martina Hilldorfer. “There is an order coming in.”
The Tuesday through Thursday Short order menu includes breakfast eggs to order with choice of meat, rice, toast, or hash browns; omeletes with choice of meats, vegetables, and cheese; pancakes and French Toast.
Entrees include the burgers selections with the addition of a Grand Turkey Club, Grilled Teriyaki Chicken, French Fries to order, and a Loco Moco, which is a burger patty, rice, two eggs, and gravy.
Specialty salads include Caesar Salad with Grilled Chicken, and Seared Scallop Salad with Oriental Vinagrette.
Soup du Jour includes Tortilla Soup on Tuesdays, Portuguese Bean Stew on Wednesdays, and Seafood Gumbo on Thursdays.
