Enjoyed the column on food, stupid
I want to thank the editors of The Garden Island for the wonderful Forum page, Sunday, July 17. Dr. Lee Evslin’s new column, “It’s the food, stupid,” was a delight to the eye. And the mind.
I loved the way it segued into Allan White’s letter about the dairy proposed in Poipu. The poor milk cows there will be inundated with anti-biotics and riddled with hormones. The milk they produce will not be fit to drink.
A wager. I cannot lose: I’ll bet dollars to donuts Prince Charles is not fed milk factory junk. Any takers?
Kauai has the land, the water, the nourishment from the sun to produce the best milk and milk products — real cream, cheese, ice cream, butter — to feed the state. We could, if the greedy land holders were to permit, produce dairy products that would feed the state, haul in tourists to see it, buy it, create jobs — pasturize it here, bottle it here — and grow healthy children.
Can’t our politicians put dollar signs on beauty, good health, and sane endeavors?
