PUHI — There were no leftovers to worry about Wednesday at the Regency at Puakea.
“This one has my name written all over it,” said Linda Rozelle, enjoying the last remaining piece in a pie pan with Regency resident Ray Ganett. “I’m going for it.”
Wednesday was National Coconut Cream Pie Day and chef Bree Borrero created the dessert for the residents and guests in honor of the day.
“Chef Bree did everything this morning,” said Sharon Lasker, Regency marketing director. “She even grated and toasted fresh coconut for the topping.”
Lasker said the retirement and assisted living home welcomed people between 11 a.m. and 5 p.m. for a free slice of coconut cream pie with a cup of coffee, or tea, to celebrate the delicious day.
“This is delicious,” said Bill Harper, who was enjoying a slice following lunch. “And you can quote me on that.”
Lasker said coconuts are actually fruits found on coconut palm trees. The trees grow naturally in southern Asia, Polynesia and Malaysai and are prevalent in South America, India and other warm regions of the world.
“For those who love coconuts, the next coconut day is May 31, which is National Macaroon Day,” Lasker said.
Meantime, Lasker said the public is invited to bingo night next Wednesday with retired judge Alfred Laureta serving as the guest caller.
