LIHU‘E — Those looking for a tasty holiday recipe, or an affordable gift idea, should pick up a copy of the Kaua‘i Historical Society’s “Cook ‘Em Up Kaua‘i.”
This collection of 334 recipes was originally published in 1993 and reprinted several times before going out of print.
Now it’s back, just in time for your holiday festivities.
The book includes recipes for cocktails, pupus, salads, vegetarian dishes, tasty chicken and beef, as well as savory egg and cheese dishes — all approved and enjoyed by local families and chefs. There are also tempting desserts, cakes, cookies and pies using pineapple, lilikoi, bananas, guava and chocolate. Fair warning, calorie counts are not included.
“I have probably 1,000 copies,” KHS Executive Director Mary Requilman said. “It’s a great Christmas gift.”
The new Centennial Edition of the book kicks off the KHS’ celebration of its founding in 1914. While the recipes are not contemporary, unique vignettes throughout the book detail the Hawaiian hospitality that was offered by renowned women on Kaua‘i in the early 20th century.
The vignettes — researched and written by Bette Layton of Kaua‘i and Arizona — center on the holiday and the everyday meals that were prepared from fruits, vegetables and meats grown in home gardens.
“There’s a little bit of a history infused into these wonderful recipes,” Requilman said.
Photos of historic homes such as Koamalu, Kipu Kai Ranch, Kalapaki, Halemanu and Hale Nani accompany the vignettes.
Requilman says there are several recipes in the book that she considers personal favorites, including coconut cookies and a marinated beef dish.
“The meat comes out really tender,” she said. “I’ve done that one several times.”
Copies of “Cook ‘Em Up Kaua‘i” are $15 and available at the Kaua‘i Historical Society, located in the Historic County Building, 4396 Rice St. in Lihu‘e. Proceeds from the cookbooks will be used to further the mission of the Kaua‘i Historical Society.
