When it comes to Tequila cocktails, no establishment on the island can compare to the cocktails at Tortilla Republic in Koloa. Home to more than 60 different types of Tequila, Tortilla Republic will not disappoint.
Bryan Townsend, general manager of Tortilla Republic, wanted to get away from normal everyday cocktails and, instead, offer cocktails that would be unique and savory.
“When we opened this restaurant in October 2011, I wanted to get away from the typical lava flows, pina coladas,” Townsend explained. “What I like about our drinks is that they’re made from fresh ingredients, and you don’t realize you’re drinking tequila until it’s too late.”
Townsend created three special drinks for the Kaua‘i Times: the Cucumber Lavender Margarita, the Po‘ipu Heat and Hydration Margarita.
Cucumber Lavender Margarita
The Cucumber Lavender Margarita is composed of Sauza Blue Silver Tequila, fresh squeezed lime, muddled cucumber and house-made lavender syrup.
This is a refreshing cocktail that is more on the sweet side. The unique combination of the house-made lavender syrup, which is made from fresh lavender petals and the fresh squeezed lime juice is a winner to both the cocktail connoisseur and everyday consumer.
Po‘ipu Heat
The Poipu is composed of Sauza Blue Reposado Tequila, muddled cilantro, fresh lime sweet and chili pepper water. This drink is a man’s drink. It isn’t your typical “foo foo” cocktail. It is spicy, savory and delicious — something unique and worth trying for yourself.
This drink is my favorite from Tortilla Republic, because it is so different from the normal cocktails offered anywhere in the island.
Hydration Margarita
The Hydration Margarita is composed of Sauza Blue Silver, Triple Sec, fresh lime sweet and coconut water. This is the simplest drink out of the three mentioned, but it is also the most refreshing and smoothest drink. The coconut water is what makes this drink shine. Like its name indicates, it hydrates and cools you down instantly.
