WAILUA — The newest old movement in dining, known as ‘locavore’ eating, is still evolving. Pop-up dining, its freshest manifestation, sprouts in Wailua this Sunday.
“Grown — A Restaurant for the Community” pops up at Caffé Coco at 4369 Kuhio Highway in Wailua on Mother’s Day.
Chef Chris Kulis from Capiche restauraunt in Wailea, Maui, and partner Tarah Principato are flying over to gather and cook dinner for one night only. Kulis has already arranged to pick up and slaughter a lamb on the North Shore, and he’s bringing Maui tomatoes to make a ragu with the lamb for the main course; he’s also bringing over honey from his Maui farm.
He also plans to peruse farmer’s markets here on Kaua‘i to fill out the menu for the four-course meal.
“We don’t want to do a typical Mother’s Day brunch,” he said. “Instead, we’re going to do a slow supper.”
The event is being hosted by Grow Culture, a local food organization “designed to promote healthy conversations between farmers and chefs, professional or amateur, so that they might blossom into mutually beneficial relationships,” according to its website.
Kulis said he met Grow Culture founder Collin Darrell when Darrell ate at Capiche, and the idea to fly Kulis over bolssomed.
“We both have a big passion for food and growing food,” Kulis said. “I have my own farm here, and he toured it the next day and asked if I wanted to do a pop-up on Kaua‘i.”
He said he hopes the event takes root.
“I hope we can do it a couple times a year,” Kulis said. “It’s all about growing the food culture in Hawai‘i.”
Cost is $50 per person plus tax and gratuity. Jeff Caldwell will be entertaining.
