Laurie Shibao doesn’t take the fine art of mixing drinks lightly. A bartender for seven years at Gaylord’s at Kilohana, Shibao makes her craft look like a breeze.
She’s constantly dreaming up tasty concoctions using fresh herbs and ripened fruit from the restaurant’s garden.
An off-the-menu favorite is a lihing mui margarita. The sweet South of the Border drink is made of Triple Sec, Sauza Tequila, orange liqueur, fresh lime and orange juice with lihing mui and lilikoi.
Another favorite is the toasted macadamia drop. The martini is made from Absolut Citron and Frangelico with toasted almonds, macadamia nuts and fresh sugar cane.
Shibao believes it’s a crime not use the fresh produce offered from the gardens at Kilohana, and all of her drinks have a signature Kaua‘i twist.
Next time you stop by for a drink, be sure to enjoy the restaurant’s historic setting and open-air terrace, which creates a relaxing atmosphere for diners to enjoy seasonal island cuisine.
Gaylord’s is open at 11 a.m. for lunch and 5 p.m. for dinner Monday through Saturday. On Sunday, brunch is from 11 a.m. to 2 p.m.
