Tucked in the back of Kinipopo Shopping Village, Icing on the Cake is one of Kaua‘i’s best kept secrets.
The personalized coffee they sell there is reason enough for a (daily) visit to Icing on the Cake.
Andrea Quinn grinds coffee beans after every order, and pours each cup with the same love with which she prepares her famous sweets.
Baker extraordinaire Andrea used to quietly run her business in Waipouli Plaza, close to Safeway, offering her scrumptious creations for special events such as weddings, anniversaries and birthdays. But unfortunately, the common citizen like me and you could not taste those heavenly sweets unless we were invited to one of those parties.
It all changed two years ago, when Andrea decided to open a retail store in Kinipopo. Icing on the Cake does have daily quiches and paninis — and they’re pretty much unreal — but what really stands out there are Andrea’s creations.
She has been baking for nearly 20 years, and still has the passion to create new sweets all the time. Every time she lays her eyes on some fresh local ingredient, such as lemons, lilikoi or pineapple, Andrea’s brain starts to craft a new recipe immediately without even realizing it.
“I’m so passionate about baking,” she said. “I get really excited when I see new ingredients.”
Andrea doesn’t even have a set menu; what you see in the store may not be there ever again. Doesn’t it make you want to hurry there every day?

Place a filter in a coffee drip with a mug under it. Grind thebeans to a fairly fine ground, close to espresso grounds. Heat upfiltered water — and this is important — to almost boiling point.Add the water in three-stages, and always with a circular motion. The first phase is just to moisten the coffee grounds to let theflavor bloom. The second phase is to start the brewing process. Inthe final phase, add the rest of the water to fill up the mug. Theentire process should last between three and four minutes to createa perfect cup of coffee. Let your passion for coffee bloom.
