Kapa‘a’s Courtney Bundy was enjoying her date night, drinking a Pineapple Mojito, made with fresh fruit and a bunch of other yummy stuff.
Courtney is a Kaua‘i Community College student who uses her brain and smile to help her sell jewelry at her mom’s store, Jewel of Paradise, in Hanalei.
The gorgeous blonde is originally from San Diego, Calif., and said she loves Kaua‘i and enjoys cruising at the beach and camping in Hanalei in the summer.
Courtney is also an avid runner and stand-up paddler. We’re not sure if she picked it up from the local boy she was on a date with, who is an accomplished SUP surfer.
If you’re lucky, you might be able to spot her working as a server at St. Regis Resort in Princeville. Just leave the girl a good tip, because her smile is priceless.
The Eastside is open Monday through Saturday for dinner, from 5:30 to 9 p.m. The bar, always a meeting place, stretches the hours a little longer.
1 1/2 ounces of light rum
1 ounce simple syrup
Soda water

Muddle the pineapple and the mint inside a shaker, squeeze the limein it, and add the rum and the simple syrup. Shake it well, neverforgetting to smile. Pour it over ice, and add a splash of soda.Garnish with pineapple and mint. Smile!
