At the Paradise Bar & Grill, food and drinks flow all day long, any time of the year.
Located at the back end of the Princeville Shopping Center, I strolled into the open-air establishment in the early afternoon to see what the bar had to offer.
As a North Shore resident, Paradise is a place that I have frequented quite often, usually going in for the buffalo burger — my go-to — or a fish special, but this was a different venture.
Everett and Clark took me up on my offer to make their signature drink, putting together a “Na Pali Sunset” which didn’t disappoint.
An easy recipe combines some ice, light rum, a housemade strawberry purée, orange juice and a dark-rum floater. Add a pineapple slice to complete the presentation.
The two made sure that I was of age before sliding the drink over, noting that this would probably be the most-well-thought-out sting operation ever created.
Everett has been working at the restaurant for four months, while Clark is about two years in.
“It’s a family-owned business,” Clark said about Paradise. “So it feels like an ‘ohana after a bit.”

1 ounce light rum
strawberry purée
orange juice
1/2 ounce dark rum floater
Pineapple slice and little umbrella to garnish
Pour the light rum, strawberry purée and orange juice in a niceglass over ice. Stir and top with the dark rum floater. Garnishwith the pineapple and a little umbrella and drink to paradise!
