Macaroons, available in two sizes at the Kaua‘i Granola shop in Waimea, have been around for at least two winters, said Cheryl Salazar, the shop’s owner.
“We started making them for the gift boxes where they are dipped in chocolate, but the customers really like them, so we continue to make them,” Salazar said, her Kaua‘i Granola website touting the delicacy as “the best chocolate-dipped macaroons.”
The macaroons in the gift boxes are individually wrapped and packed nicely for shipping, said Debra Carr, who worked alongside Salazar packing boxes of shortbread cookies for delivery.
“Today is our ‘wholesale day’ where we work on getting product out to the different places,” Salazar said. “Usually it works out because when there aren’t that many walk-in customers we have wholesale orders to fill.”
Located on Kaumuali‘i Highway in Waimea town, Kaua‘i Granola offers a wide assortment of goodies that are testaments to Salazar’s culinary skills. These range from different-flavored granola, dried fruit, home-baked cookies and, of course, the macaroons.
Originally, Salazar made the goodies to give away as gifts, or as the locals say, “omiyage.” But after experimenting with different flavors, Kaua‘i Granola was born.
On wholesale day, she partners with the Aunty Liliko‘i ‘ohana in getting product delivered to various accounts on the island.
“It’s good that we can share,” said Salazar, who helps Aunty Liliko‘i by making the crusts for the liliko‘i-chiffon pies. “That’s how it was in the old days, and it works.”
