Tomkats Grille is the kind of bar and restaurant you’ll leave swearing you had just been to your cousin’s backyard. The cozy atmosphere and the coolest staff on Kaua‘i will welcome you with open arms. It’s there that you’ll find the unique “Marla’s Pavé Surprise.”
This one-of-a-kind drink is made with Amsterdam’s exotic Pavé, the only liquor in the world distilled with diamonds. That’s right, diamonds. Organic fruits lend taste and aroma to this rich, 60-proof liqueur. The result is one of the purest liquids you could ever drink. And it tastes pretty darn good too.
Bartender Marla Borrero came from San Diego almost 20 years ago, but has never forgotten her Mexican heritage. She’s famous for her menudo soup, a Latin American delicacy difficult to make, as any false step may turn it into a bad dish.
Every Cinco de Mayo Marla gives away samples of her delicious dish, which has earned her the unofficial title of Menudo Lady. Her menudo, however, is only for her friends. But hey, there’s plenty of time until Cinco de Mayo to frequent Tomkats Grille and befriend Marla.
Marla’s Pavé Surprise
1 ounce Pavé
1/2 ounce Patron Silver
Splash of lime juice
Dash of grenadine
Splash of sweet and sour
Sugar and a lemon wedge
A taste for diamonds
Throw all liquids in a cocktail shaker, and give it a good waggle. “Shaken, not stirred,” recommends Marla. Strain into a martini glass that had its rim previously coated with sugar, and garnish with the lemon wedge. You’ll never forget this drink; a famous British secret-service agent once said “diamonds are forever.”
