A mai tai is probably Hawai‘i’s most common drink. But if you happen to order a Frozen Mai Tai at Keoki’s Paradise in Poipu, be aware this is something much different. Keoki’s delicious signature drink could easily double as a dessert.
The Frozen Mai Tai is served in a large tiki glass, resembling a sorbet bowl topped with some inviting dark rum. It’s not only refreshing, it’s mouth-watering. This is the time when you are allowed to eat dessert first.
Natural beauty Kim Medeiros blends the perfect drink. She has been bartending at Keoki’s for seven years. Despite the nice ring on her left hand, she says she’s single, but don’t think for a moment she is frail and waiting to be rescued.
Kim’s sweet and delicate smile is only a façade for a powerful woman. Her family owns a cattle ranch in Koloa, and she has been riding horses since she’s a little girl, snatching many rodeo prizes. “I’m pretty good,” she says without any modesty whatsoever.
While we cannot confirm how good she is in the saddle, her confidence seems to leave no room for doubt. But we can say for sure, this is the best Mai Tai on Kaua‘i, hands down.
Frozen Mai Tai
1 ounce dark rum
1/2 ounce gold rum
Passion fruit sherbet
Splash of POG
Scoop of ice
Confidence
Exercising confidence, throw all ingredients, but the dark rum, in a powerful blender. Wait until it looks smooth and then gently but firmly pour into a tiki glass. Top it off with the dark rum, and you’ve got an amazing drink.
