What follows are two recipes from Kapi‘olani Community College’s cookbook, “A Dash of Aloha: Healthy Hawai‘i Cuisine and Lifestyle” published this month by Watermark Publishing.
Healthy cuisine certainly doesn’t translate as low-cal in this dense volume packed with variations on island favorites rife with local grown ingredients.
The press release states: “The recipes are based on local tastes and emphasize eating island-grown, fresh ingredients, simply prepared to get the greatest benefits,” said Ron Takahashi, chairperson of the Culinary Arts Department at the college.
Add color to the buffet table by throwing together a simple baked squash salad; or if a one-pot meal is all you have time for in the frenzy to prepare for guests, Hawai‘i-style baked beans may be the perfect crowd pleaser.
