Fish processors in the background are busy preparing for deliveries that are earmarked for retailers, hotels, and restaurants for the New Year’s celebration on Kaua’i where dining on sashimi is a tradition. The wholesaler said the top three fish in demand are ahi, mahimahi, and opaka. Supplies are good so they should be able to fill all their orders, he said.
