Fresh Kauai Beef Heart Jerky…

Yes you read correctly…..Beef Heart Jerky!

I was inspired after watching Andrew Z. on the Travel Channel….eating bizarre foods of the world! Start by trimming the fat and hard matter off the beef heart. Cut into manageable chunks then thinly slice against the “grain.” You will need a sharp, sturdy knife…..may I suggest a MBIII (available @ Kojima’s for just 10 bucks)! Marinate (about 6 hrs) the sliced heart in some teri sauce…shoyu, sugar, ginger, garlic…maybe add some kimchee base or red pepper flakes for some heat! I used my dehydrator to cure my jerky. The first stage took about 6 hours. Huli, sprinkle with coarse black pepper, and dehydrate until your jerky is done (about additional 12 hrs.). Fresh Kauai beef heart is available at Kojima’s every Saturday! I recommend using only FRESH Kauai beef heart. The finished product looks just like beef jerky and has a subtle livery taste…..akin to comparing dried Aku to Ahi.

If this doesn’t suit your palate….your dog will be happy! Just dust off da black pepper before you feed Fido
