Clams Casino Dip


• 2 (6.5 ounce) cans minced clams, with juice

• 1 pound cream cheese

• 6-8 strips bacon

• 1/2 tablespoon butter

• 1 jalapeno, seeded, minced

• 1/2 cup small diced red bell pepper

• 1/3 cup small diced celery

• 2 cloves minced garlic

• 1/4 cup minced green onions, save tops for garnish

• 1/2 lemon

• hot sauce to taste

• Freshly ground black pepper to taste


Prep Vegetables. Fry bacon in butter, on medium heat, until crispy.  Drain fat and set bacon on the side. Reserve 1 teaspoon bacon fat for cooking the vegetables. Sauté jalapeno, red bell pepper, celery and garlic until barely softened (about 3 minutes). The natural juices from the vegetables will deglaze the bacon browning on bottom of pan. Add juice from 1 can of clam and cook until the juices are almost all gone (3 Mins). Transfer to plate to cool. Add cooled vegetables, drained clams and bacon (reserve a little bit for garnish) to cream cheese. Add pepper and hot sauce. Mix.  Place in bowl and garnish with reserved bacon and green onion. Serve with bread or buttery crackers.
